Bran muffins:
A delicious muffin is great to start the day, but instead of buying one at the store, which can have loads of fat and sugar in it, opt for making them yourself. At night, make some fiber-rich muffins so that all you have to do is grab them and go in the A.M.
Skinny Omelette
Eggs is a breakfast staple, so create a quick omelette in the morning, adding your favorite vegetables to the mix. And if you’re trying to eat really healthy, opt for egg whites and a whole wheat tortilla to make a breakfast burrito on the go! It’ll take you all of five minutes or less to make.
Peanut Butter, Strawberry and Banana Quesedillas
It’s so good that you’ll forget it’s a healthy breakfast! Grab a whole wheat tortilla and cut up slices of banana and strawberries and place them over a thin layer of peanut butter spread onto the tortilla and you’ve got a fruit breakfast quesedilla that’s good for you. Now all you’ll need is a glass of milk to wash it down with.
Egg Muffins
At night, bake some egg muffins for easy grab-and-go snacks the whole family will love. Just make your frittata in a muffin pan at night and fill with extra vegetables and turkey bacon or chicken sausage and you’ll have your favorite breakfast snack while on your way to work or school.
Avocado Toast with Ricotta
Skip just regular old toast with butter and opt for something with more flavor like some avocado toast with ricotta. Top it off with some crushed red pepper for added flavor or spice it up by adding your favorite veggies!
Hardboiled Egg Sandwiches
When you don’t have the time to fry an egg, just make some hardboiled eggs the night before and use them for a delicious egg sandwich in the morning. They can actually be stored in the fridge for up to a week! In the A.M. just get some toast, fresh tomatoes and scallions to complete the scrumptious breakfast sandwich.
